Potato - 2 medium
Shallots - 1/2 cup (thinly sliced)
Green chili - 2 nos
Second coconut milk(thin) - 1 cup
First coconut milk(thick) - 1/2 cup
Salt to taste
Coconut oil - 2 tsp
Mustard seeds - 1/2 tsp
Red chili - 2 nos
Curry leaves - a sprig
1. Pressure cook the potatoes for 2 whistles, peel it, roughly mash it and keep aside.
Allow it to stand for 10 to 15 mins before serving. Serve and enjoy the feast.
- This curry tends to thick as potatoes are added. It will be a semi thick consistency.
- After adding first coconut milk no need to stir for a long time.
