This was in my 'to do' list for a long time and finally made to find out these eggless chocolate cookies. I was searching for eggless plain chocolate cookies and most of the searches ended up with choco chip cookies only. I referred this recipe from divya's cookbook and made some minor variations.

Eggless Chocolate Fondant Cakes / Chocolate Lava Cake Recipe
My little one is having her vacation now and it 's been a month i had baked something. So i set my apron to dig into these warm molten cakes. This dessert is also described as lava cakes, fondant, souffle cakes because of it's dense and moist texture. They have a rich chocolaty flavor and these cakes rise beautifully as they bake and will slowly settle down once removed from oven. They have a firm crust on top but yet the centers will be slightly wet and wobbly.

Coconut Ladoo Recipe

Holi is festival of colors and is most vibrant of all as it is filled with colors and joy.
Last week with all that cold and the mess i made with my laptop, i couldn't possibly plan for any other recipe for this holi. With holi round the corner on Monday i just made this simple coconut ladoo which can be made for any festive occasions. This is made with very few ingredients and requires less time.

Bread Baji / Bread Pakoda
Bread baji/pakora is one of my favorite tea time snack as it can be made in a jiff. Nowadays it has become a popular street food snack in India. Without any vegetables you can make a tasty baji. I tried this first during my college days when my friends arrive at home. We girls used to finish these hot baji's in a gulp!! You can also sandwich the breads with green / tamarind chutney and make sandwich pakora's.

I have already mentioned about the health benefits of makhana in my makhana kheer post. This is another recipe which can be a much healthier choice when compared to popcorn's. I like to munch it in the mid-day breaks. A simple and guilt-free snack to have at any time made from puffed lotus seeds. In India phool makhana is available in big supermarkets or any 'dry fruits and nuts' store.

Tomato Rice / Tomato Rice with No Ginger Garlic
I have tried and tasted many varieties of tomato rice/thakkali sadham. You can make it as biriyani, pulao, tomato bath or as a simple tomato rice. Here is my own version of tomato rice which is simple and yummy too with no ginger garlic. I make this version often when i feel lazy to grind the ginger-garlic paste.
